Tapsilog is a portmanteau — tap-a (cured beef), si-nangag (garlic rice), and it-log (egg) — and it's the default Filipino breakfast. At Jeepney Winnipeg, our tapa is thinly sliced beef marinated overnight in soy, calamansi, brown sugar and crushed garlic, then quickly pan-seared to order. The sugar caramelizes at the edges while the meat stays tender.
Paired with toasted garlic fried rice and a yolk-dipped sunny-side egg — plus a small bowl of spiced vinegar on the side — this is Filipino breakfast the way it's eaten in Manila canteens from 6 AM to midnight.
