Adobo is the Philippines' national dish — and every Filipino family claims their mother's version is the best. At Jeepney Winnipeg, our Pork Adobo follows the traditional Ilocano-leaning recipe: cubed pork shoulder braised low and slow in cane vinegar, soy sauce, freshly crushed garlic, whole peppercorns and Philippine bay leaves until the liquid reduces into a glossy, deeply savoury sauce.
The balance of salt, tang and umami is the mark of a proper adobo, and ours tips slightly toward vinegar — the way they make it up north in Ilocos. Served with steamed rice (and a soft-boiled egg on request), it's the single most-ordered comfort dish on our menu and the easiest gateway for first-time Filipino food diners.
