Chicken Inasal originates from Bacolod in the Philippines and is arguably the country's most iconic Filipino grilled chicken dish. At Jeepney Winnipeg, we marinate bone-in chicken quarters overnight in calamansi juice, lemongrass, crushed garlic, black pepper and annatto oil — the marinade that gives inasal its signature bright orange glow. Slow-grilled over charcoal and basted continuously, the skin turns crackling while the meat stays juicy.
We serve our Chicken Inasal with golden garlic-turmeric Java rice, a side of atchara (pickled green papaya), and a house sawsawan of soy, vinegar, calamansi and chili. Many guests pair it with sinigang or chicken sotanghon soup for a complete Filipino feast. It's among the top-ordered dishes on our menu — and a perfect introduction to Filipino grilling.
