Bangus, or milkfish, is the national fish of the Philippines — and our marinated deep-fried bangus is the way it's most beloved on breakfast and dinner tables across the country. We butterfly the whole fish, marinate it overnight in coconut vinegar, crushed garlic, black pepper and bay leaf, then deep-fry to order until the skin is impossibly crisp and the flesh stays sweet and flaky.
Served with garlic sinangag rice, fresh sliced tomato, and a small bowl of spiced vinegar with chopped chili for dipping, this is Filipino comfort food at its cleanest and most satisfying.
