Bagnet Kare-Kare is Jeepney Winnipeg's signature creation — a bold fusion of two Filipino classics. Bagnet, a celebrated Ilocano delicacy, is pork belly slow-boiled until tender, then deep-fried twice until the skin becomes impossibly crisp. We lay this crispy, golden pork over a thick, savoury peanut-and-annatto sauce simmered with eggplant, bok choy, long beans, and banana blossom — the traditional kare-kare vegetables.
Finished with a side of bagoong (fermented shrimp paste) and steamed rice, this dish is a celebration of texture and flavour: shattering crackling crust, meltingly tender pork, and a deep, nutty sauce that lingers on the palate. It's why Jeepney Winnipeg is known as the "Republic of Bagnet" and the first dish we recommend to new guests at our Inkster Boulevard restaurant.
